Marinade – pork rub:
Crushed black pepper
8 – 10 cloves
4 tablespoons brown sugar
2 tablespoons salt
2 tablespoons garlic powder
2 tablespoons onion powder
Pinch of red chilli flakes
1 tablespoon ground cumin
Dash of smoked paprika
2 tablespoons coriander powder
Put all these spices together in a bowl and mix well.Method:
Roll out the mince pork into a rectangle shape and make it an inch thick. Sprinkle the pork rub onto the mince pork rectangle. Add the vegetables and spread it evenly on the pork rectangle.
Next drizzle some BBQ sauce on the pork/veg rectangle and roll up the pork mince slowly from one end
Using the bacon strips to create a bacon lattice to wrap around the mince pork roll. Lay out the bacon strips in a cross weave shape on wax paper. When the bacon weave is done, slap it onto the pork loaf and peel off the wax paper. Make a second bacon weave for the back of the pork loaf so that it completely protected.
Place the bacon mince pork loaf on a smoker or kettle BBQ and cook it for 3 hours. Drizzle some more BBQ sauce onto the bacon bomb on the last hour of cooking. Spread the sauce all over the bacon bomb with a brush.
